  1. 2 lb Fresh spinach

  2. 4 tb Unsalted butter

  3. 3 tb Olive oil

  4. 2 Cl Garlic, minced

  5. Salt to taste

  6. Cayenne to taste

  7. 4 tb Golden seedless raisins

  8. 4 tb Pine nuts

  9. 2 tb Parmesan cheese

  1. Wash and drain spinach.

  2. Cut into coarse shreds.

  3. Plunge into boiling water and immediately drain.

  4. Heat 2 tbs.

  5. butter and olive oil in frying pan.

  6. Add garlic and cayenne.

  7. Cook over moderate heat 2-3 minutes, then add raisins and pine nuts.

  8. Cook 2 minutes more and add spinach, stirring until well blended.

  9. Place in hot, flat ovenproof serving dish.

  10. Sprinkle with cheese.

  11. Melt remaining butter and pour over.

  12. Brown quickly under broiler.

  13. Note: Taste for salt before placing in baking dish, but remember that Parmesan cheese is a bit salty.
