  2. Title: Lemon Oregano Vinaigrette

  5. 1 Shallot, peeled,diced fine

  6. 1 ts Dijon mustard

  7. 1 ts Fresh oregano, minced

  8. 2 md Lemons, JUICE only

  9. 1/2 c Olive oil

  10. In a bowl whisk shallot, mustard, oregano and 1/2 of lemon juice

  11. until combined well.

  12. Add oil slowly while whisking vigorously. Add remaining lemon juice

  13. and season with salt and pepper. Add oil, a little at a time, blending after each addition until sauce coats the back of a spoon.

  14. Add additional seasoning to taste if desired.

  15. NOTE: This is delicious drizzled over sliced beefsteak tomatoes

  16. and sprinkled with crumbled blue cheese if desired.
