  1. 2 cups 474ml Chicken broth

  2. 1 cup 237ml Tomato or vegetable juice

  3. 1/4 cup 40g / 1.4oz Long-grain rice

  4. 1/2 Boneless chicken breast - cooked, and Cut into 1/2" dice

  5. Thinly-sliced green onion - for garnish

  1. Bring broth, juice and rice to a boil and simmer for 15 minutes. Add cooked chicken and simmer 5 minutes longer. Ladle out and garnish with green onion.
