  1. Old-fashioned baked Macaroni And Cheese

  2. Makes 6 Servings

  3. 1 teaspoon soy margarine

  4. 3 cups cooked macaroni elbows

  5. 1 clove garlic, minced

  6. 2 1/2 tablespoons soy Parmesan

  7. 1 medium shallot, minced

  8. Sea salt and freshly ground black pepper

  9. 1/2 cup chopped onions

  10. 1 1/4 cups plain soy milk

  11. 1 tablespoon whole wheat bread crumbs

  12. 1 teaspoon arrowroot

  13. 1/2 cup grated soy cheddar

  14. Preheat oven to 350 F. Heat the margarine in a medium nonstick

  15. skillet over medium heat. Add the garlic and shallot and cook,

  16. stirring, until golden, about 1 minute. Add onions and cook, stirring,

  17. until translucent, about 3 minutes. Add the soy milk and bring to

  18. a simmer. Mix the arrowroot with 2 teaspoons of water and whisk

  19. into the soy milk mixture for 1 minute. Add the soy cheddar, whisking

  20. continuously. Toss in the pasta, 2 tablespoons of the soy Parmesan,

  21. and season with salt and pepper.

  22. Transfer the mixture to a nonstick loaf pan. Sprinkle with the

  23. remaining 1/2 tablespoon Parmesan and the bread crumbs. Bake in the

  24. oven for 15 minutes. Serve warm. Cut in slices just like a meat

  25. loaf.
