  1. 1 medium cucumber, chopped

  2. 1 (198g) tin sweetcorn, drained

  3. 2 large tomatoes, chopped

  4. 1 green pepper, chopped

  5. 1 red pepper, chopped

  6. 2 tablespoons red wine vinegar

  7. 1 tablespoon dried crushed chillies

  8. 1 clove garlic, minced

  9. 1/2 teaspoon cumin

  10. 1/4 teaspoon salt

  11. 1/8 teaspoon ground black pepper

  12. handful fresh chopped coriander

  1. In a large bowl, toss together the cucumber, sweetcorn, tomatoes, green pepper, red pepper and red wine vinegar. Season with remaining ingredients. Cover, and chill at least 30 minutes before serving.
