  1. 12 oz bag Fresh Spinach or Frozen Chopped Spinach

  2. 1 Garlic Clove , finely minced

  3. 1/2 cup Grated Romano Cheese

  4. 1 Green Onion or , to taste

  5. 8 oz Feta Cheese , crumbled

  6. Fresh or Dried Oregano , crushed

  7. Rosemary Leaves

  8. Oil To Fry

  9. Butter

  10. Wonton Wrappers

  1. For the filling, place the spinach in a food processor and chop, then remove and and place in microwave for one minute to wilt leaves. Drain well. Press as much liquid out of leaves as possible using the back of a spoon then set aside. In food processor, place garlic, onion, oregano and rosemary then mince. Add feta and Romano cheese to garlic mixture and blend well. Once mixed, place in refrigerator to chill 1-3 hours. Lay out wonton wrappers on a cookie sheet and place 1/2-1 teaspoon of cheese mix on wrapper. Wet edge with water to seal and fold as directed on wonton wrapper package.

  2. Heat oil on medium high heat, and when oil gets wavy, slowly place 4-6 wontons into pan. Cook on one side until light brown, turn over and when both side are golden light brown, remove from oil and place on a paper towel to drain. Repeat until completed with all wontons.
