  1. 2 Egg yolk

  2. 5 Garlic - crushed, cloves

  3. 1 tablespoon 15ml Mustard - prepared

  4. 1 tablespoon 15ml Lemon juice

  5. 3/4 cup 177ml Olive oil

  6. 1/2 teaspoon 2 1/2ml Salt

  7. 1/4 teaspoon 1 1/3ml Pepper

  1. Separate yolks and whisk yolks with mustard and garlic in a bowl. Add oil drop by drop, beating continuously until half of oil is used. Add lemon juice a little at a time and remaining oil still beating. Season with salt and pepper.

  2. Serve as dip for shrimp or sauce over fish such as sole, flounder, or halibut. Chill.
