  1. 1 box(es) (6-ounce) long-grain and wild rice mix

  2. 1 package(s) (4-ounce) sliced mixed wild mushrooms

  3. 1 tablespoon(s) olive oil

  4. 1/4 cup(s) (loosely packed) fresh parsley leaves , chopped 5 teaspoon(s) grated fresh lemon peel

  1. Prepare rice mix as label directs, but do not add butter or margarine.

  2. Meanwhile, in microwave-safe small bowl, place mushrooms and oil. Cover bowl with vented plastic wrap. Cook mushrooms in microwave oven on High 2 minutes, stirring once halfway through cooking. Set aside.

  3. When rice is done, stir in mushroom mixture, parsley, and lemon peel.
