  4. peanut oil

  5. **spicy lentil dip**

  6. 3 cups cooked lentils

  7. 1/2 cup coarsely-chopped red onion

  8. 4 garlic cloves -- coarsely chopped

  9. 1 serrano pepper -- coarsely chopped

  10. 2 tablespoons white wine vinegar

  11. 2 tablespoons olive oil

  12. 1/4 teaspoon cumin

  13. salt -- to taste

  14. freshly-ground black pepper -- to taste

  15. 1/4 cup coarsely-chopped cilantro

  1. Preheat grill.

  2. Brush each pappadums quarter with oil on both sides.

  3. Grill on each side until blistered, about 10 to 12 seconds on each side.

  4. Spicy Lentil Dip: Place lentils, onion, garlic, pepper and vinegar in the bowl of a food processor. Process until smooth. Slowly add the olive oil.

  5. Season with cumin, salt and pepper and pulse 3 times. Remove to a bowl andGarnish with cilantro.
