  6. 2 c Cranberries

  7. 1/2 c Granulated sugar

  8. 1/2 c Brown sugar

  9. Juice of 2 oranges

  10. Grated rind of 1 orange

  11. 2 Whole star anise

  12. 1 1/2 c Whipping cream

  13. Orange rind for garnish

  14. Mint sprigs for garnish

  16. Combine all ingredients except cream and garnishes in a saucepan.

  17. Heat to a boil over medium heat, stirring now and then to prevent

  18. sticking. Reduce heat and simmer, uncovered, for 20 minutes. Chill.

  19. Cranberry sauce may be stored in refrigerator as long as 1 week. Whip

  20. cream in a cold bowl with cold beaters, to stiff peaks. To make

  21. ahead, put cream into a cheesecloth-lined wire mesh strainer set over

  22. a bowl. Refrigerate, covered. May be prepared as much as 6 hours

  23. ahead of serving. To serve, fold 3/4 cup of the chilled cranberry

  24. sauce, leaving streaks, into the whipped cream. Spoon into a stemmed

  25. serving dish. Garnish with orange rind and mint. - - - - - - - - - - - - - - - - - -
