  7. 4 Slices Bacon

  8. 2 ts Sliced Green Onions/tops

  9. 3/4 ts Salt

  10. Dash Pepper

  11. 3 Med. Potatoes

  12. 1 tb Snipped Parsley

  13. 1/8 ts Dried Thyme, Crushed

  14. 4 Large Eggs

  15. In 8-inch skillet coo bacon until crisp; drain,

  16. reserving 2 T of drippings. Crumble bacon and set

  17. aside. In same skillet combine reserved drippings,

  18. peeled, thinly sliced potatoes, onion, parsley, salt,

  19. thyme and pepper. Cover tightly; cook over low heat

  20. 20 to 25 minutes,

  21. stirring carefully once or twice. In small bowl beat

  22. together eggs and milk; pour over potato mixture.

  23. Cover and continue cooking over very low heat til egg

  24. 8 to 10 minutes. With a wide

  25. spatula, loosen sides and bottom and slide potatoes

  26. out onto serving plate, or serve from skillet.

  27. Sprinkle crumbled bacon atop. Serve hot. - - - - - - - - - - - - - - - - - -
