  2. CARROT, LEEK AND OLIVE STEW

  6. 3 c Leeks -- scrubbed and chopped

  10. 2 c Raw carots -- scrubbed and -finely diced

  11. 1 c Raw red potatoe -- finely

  12. -diced

  13. 2 tb Tomato paste

  16. Salt and pepper to taste

  17. 2 c Vegetable broth

  18. 1/2 c Ripe plives -- pitted and -chopped

  19. SAute leek and garlic in oil in a 4-quart stew pot.

  20. When leeks are soft, add all other vegetables and seasonings. Add broth, cover, and bring to a boil.
