  1. 1 lbs ground turkey

  2. 1 tbsp olive oil

  3. 1 tsp salt

  4. 2 tsp sage (or poultry seasoning )

  5. 1 tsp fennel seeds (whole or ground)

  6. 1 tsp thyme

  7. 1/2 tsp black pepper

  8. 1/2 tsp smoked paprika

  9. 1/2 tsp onion powder

  10. 1/4 tsp cayenne pepper (for mild heat)

  11. 1/4 tsp garlic powder

  12. 1/8 tsp powdered ginger

  13. 1/8 tsp ground cloves or allspice

  14. 1/8 tsp nutmeg

  1. Mix all ingredients and blend well by mashing with a fork.

  2. Refrigerate in a covered container overnight to let spice flavors develop and absorb into the meat.

  3. You can form the meat into patties, or cook into crumbles for pizza toppings. Cook meat in a skillet with a tablespoon of margerine over meduim heat - cook just until juices run clear.

  4. The uncooked meat can be added to your favorite meatloaf or meatball recipes, or freeze the meat for use latter.
