  2. 2 Onions; chopped

  3. 2 Carrots; peeled; sliced

  4. 5 lb Loin or shoulder pork roast

  5. 2 ts Salt

  6. 1/2 ts Oregano

  7. 1/2 ts Ground coriander

  8. 3/4 c Beer

  9. --GREEN SAUCE--

  10. 2 tb Olive oil

  11. 1 Onion; chopped

  12. 1 cl Garlic; peeled, chopped

  13. 10 oz Tomatillos

  14. 1/2 ts Dried oregano; crumbled

  15. 1/2 ts Dried cilantro

  16. 2 tb Wine vinegar

  17. 1/2 c. reserved liquid, onion, garlic, oil, oregano, and cilantro in jar of electric blender; puree. Heat skillet over moderate heat. Pour in sauce; cook
