  1. 1/4 cup 15g / 1/2oz White corn meal

  2. 1/4 cup 15g / 1/2oz Flour

  3. 2 teaspoons 10ml Salt

  4. 1/2 teaspoon 2 1/2ml Pepper

  5. 6 Fish fillets or slices

  6. 4 tablespoons 60ml Salad oil

  7. 2 Onions - diced

  1. Recipe Instructions Mix the corn meal, flour, salt and pepper together. Dip the fish in this mixture, coating both sides well. Heat half the oil in a skillet. Brown the onions in it. Remove onions and reserve. Add remaining oil to the skillet and brown the fish on both sides. Cover with the onions and cook 5 minutes. Serve hot or cold. Serves 6.
