    2. 1 pound zucchini, cut diagonally into 1/4 inch thick slices

    3. 1 teaspoon vegetable oil

    4. Fresh lemon juice to taste

    1. Preheat oven to 400 degrees F.

    2. In a large bowl toss zucchini slices with oil until coated.

    3. Spread zucchini slices in one layer in a shallow baking pan and bake in middle of oven 5 minutes.

    4. Turn slices and sprinkle with salt to taste.

    5. Bake slices 3 to 5 minutes more, or until just translucent and tender.

    6. Sprinkle zucchini with lemon juice.
