  1. 30g butter

  2. 2 (400g) large brown onions, thinly sliced

  3. 2 teaspoons brown sugar

  4. 70g ripe brie cheese, chopped

  5. 80 mls

  6. 1 egg, lightly beaten

  7. teaspoon ground nutmeg

  8. 6 sweet shortbread tart shells

  1. Preheat oven to 180C. Melt butter in a large frying pan, cook onion stirring for about 10 minutes. Sprinkle over sugar and cook a further 5 minutes or until caramelised. Remove from the heat and stir in the cheese.

  2. Allow to cool then spoon into pastry cases. In a jug combine the cream, egg and nutmeg.

  3. Spoon the egg and cream mixture over the onion and cheese mixture and bake for 15–20 minutes or until filling is golden and set.
