  6. 1 c Currants, soaked overnight

  7. -in a tightly closed jar in

  8. 1/2 c -Brandy

  9. 1 tb Sugar

  10. 3/4 c Scalded Milk

  11. 1 Yeast Cake

  12. 1/4 c Warm Water

  13. 1 c Flour, unsifted

  14. 1/2 c Butter

  15. 1 c Sugar

  16. 2 1/4 c Flour, sifted

  17. 1/2 ts Salt

  18. 3/4 t Mace

  19. 1 t Cinnamon

  20. 1 Egg, whole

  21. 1 t Lemon Rind, grated

  22. 2 ts Lemon Juice

  23. --LEMON OR ORANGE GLAZE--

  25. To the scalded milk add 1 Tbsp. sugar; cool. Dissolve the crumbled

  26. yeast in warm water, and add to milk. Add the unsifted flour, and beat

  27. until well blended. Let rise in warm place until it has doubled in bulk,

  28. about 1 hour.

  29. Cream butter and sugar until very light. Drain brandy from currants.

  30. Place sifted flour, salt, mace, and cinnamon in sifter. Add egg to

  31. creamed mixture and beat until light. Stir in lemon rind and juice. Add

  32. yeast mixture and beat thoroughly. Add currants, retaining the brandy for later. Sift in flour, add brandy, beat well. Place in tube pan or 9x5

  33. loaf pan that has been well greased. Cover with a cloth and place in warm

  34. place away from draft. Allow to rise until doubled in bulk. This mixture

  35. 4 to 6 hours to double in bulk.

  36. 375øF for about 45 minutes. Cool in pan briefly. Turn out on

  37. rack, allow to cool further. Then brush with lemon or orange glaze (recipe

  38. to follow).
