  1. 1 1/2 pounds

  2. Juice of 3 large limes

  3. 1 tablespoon 15 mL

  4. 1 cup 240 mL

  5. 1 large sweet onion, minced

  6. 3 garlic cloves

  7. 8 Thai green chiles, roasted and minced

  8. 2 cups 480 mL 10 minutes, and rinsed

  9. Salt to taste Lettuce or greens, for serving

  10. 8 half coconut shells, for serving

  11. Diced green papaya, for garnish

  1. Combine the fish, lime juice, and salt in a nonreactive bowl and refrigerate for 3 hours.

  2. Stir in the coconut milk, onion, garlic, chiles, and papaya. Allow the flavors to combine for 30 minutes, refrigerated. Adjust the seasonings.

  3. Serve on a bed of lettuce or greens, in a large bowl, or in half coconut shells. Garnish with green papaya.
