  1. Preheat oven to 350 degrees F. Grease a 9x5x3-inch loaf pan. Pat dark brown sugar into bottom of loaf pan. Cover brown sugar with jalapeno-flavored ketchup. Set pan aside for now. Cover a cookie sheet with heavy-duty aluminum foil and set aside. In large ceramic or stainless steel mixing bowl, with plastic-gloved clean hands, place ground sirloin meat and cracker crumbs. Add in beaten eggs and milk.Mix in all seasonings, onion, bell pepper and green olives. Combine well until everything is mixed. Form mixture into a loaf shape and place gently on top of ketchup/brown sugar layer. Place loaf pan on foil-covered baking sheet and place baking sheet on middle rack in oven. Bake for 30 minutes then carefully turn hot loaf pan around on cookie sheet and finish baking for up to 30 minutes longer. During last 10 minutes of baking time, tent loaf pan with 1 sheet heavy-duty aluminum foil so loaf doesn't burn. Remove foil tent and remove baking sheet and let cool for at least 10 minutes on wire rack. Carefully run sharp knife blade around sides of loaf pan to loosen meatloaf. Then place a large plate or platter over top of meatloaf and flip upside down so meatloaf is on serving dish. Glaze should drip down sides of meatloaf. Slice into 8 servings. Serve with mashed potatoes, baked potatoes, scalloped potaoes, sweet potatoes, green beans, green peas, corn on cob, creamed corn, corn pudding, biscuits, rolls, or cornbread or corn muffins. Sliced red ripe tomatoes are very good with this. Actually anything you want is good with this meal. Leftover meatloaf makes a good sandwich:).Happy cooking You can bake this in muffin pans for individual servings. I didn't think of this until now. Hugs from doggie5310
