  2. 1 yellow onion, chopped

  3. 1 green pepper or celery stalk, chopped

  4. 1 pound tofu, frozen and thawed

  5. 1/2 cup ketchup

  6. 1 tablespoon prepared mustard

  7. 2 tablespoons cider vinegar

  8. 2 tablespoons soy sauce

  9. 2 tablespoons honey or maple syrup

  10. 1 teaspoon chili powder

  11. whole wheat buns

  12. Squeeze the excess water from the thawed tofu and crumble. Saute

  13. the onion and green pepper in a small amount of water until softened.

  14. Add the tofu and the remaining ingredients and mix well. Cook about 10 to 15 minutes, stirring occasionally. Serve on whole wheat buns

  15. with your choice of garnishes.
