  1. 1 cup(s) Basmati Rice

  2. 3 tablespoon(s) Olive Oil

  3. 1 small Chopped Onio

  4. 3 piece(s) Minced Garlic

  5. 1/4 cup(s) Raisons

  6. 1/4 cup(s) Pine Nuts

  7. 1 cup(s) Good Plain Yogurt

  1. Wash the Rice in clean water until the water runs clear, about seven washes. Cover the rinsed rice with water and let the bowl sit on counter. Take a larger pot of water with add 1 to 2 Tablespoons of salt. Bring to a boil. Drain rice and add to the boiling water. Do not cover. Let rice boil for about 6 minutes. Watch to see that it doesn't boil over. Test it to see if it is done by taking a couple of grains out. Let it cool for a second or two and bite into the grain. If it doesn't have a core, in the middle it's done. If it does, let it cook for about 1 more minute. When done, take it off of the heat and drain in a colander. While the rice is draining, soak the raisins in warm water for a couple of minutes.Heat a frying pan (with no oil), put in the pine nuts and let them just barley brown to release the oils. Take them out, put in a small dish. Add your olive oil, Onions and cook over medium heat, until the onions are transparent. Add the Garlic cook for another minute and then add the Desert Spice. Stir for a minute. Now add the pine nuts, and the raisins. Stir and let all the flavors infuse for at least 1 minute. Last but not least add the rice. Stir gently with a rubber spatula, (so you don't break the rice up.) Keep lightly tossing to blend all the flavors. Turn the heat down to low, put a lid on the pan and leave alone for about 10 to 12 minutes.While you're waiting take your yogurt out of the refrigerator and put it in a dish, set the table, and now, with the kitchen smelling like a garden of spices, plate your beautiful rice on a deep platter, or beautiful big bowl. And serve.Enjoy with blessings of good health. Serve the yogurt on the side of the rice. The fragrant flavors in the rice respond wonderfully to the cool refreshing taste of the yogurt.
