  1. Winter Squash and Sausage Bake

  3. 2 medium sized acorn squashes

  4. 1 medium onion

  5. 2 small or one large apple

  6. sausages of your choice to match the weight of one of the sqashes

  7. 1 teaspoon butter

  8. 1 tablespoon olive oil

  9. 2-3 tablespoons maple-flavored pancake syrup

  10. Dried or fresh sage to taste

  11. Tabasco/hot sauce to taste

  12. 1/3 cup freshly grated parmesean or asagio cheese

  13. Use a small knife to puncture squashes all over (so they will not

  17. While squashes cook, slice onion into 1 inch cubes. Core and halve

  18. apples, cut into 1/4 inch slices. Slice sausages into small

  19. half-rounds.

  20. Cook sausages in a pan at medium high until well browned. Remove

  21. and drain sausages. Drain fat from pan.

  22. In the same pan, heat butter with olive oil. Saute apples and onions until somewhat softened and just beginning to brown.

  23. When squashes are done, you can leave them to cool, or carefully

  24. cut open, scoop out seeds. then scoop out pulp, in larger pieces

  25. if possible.

  26. Mix together in casserole: squash, apple, onion, sausage, syrup,

  27. hot sauce and sage. Top with parmesean cheese and cook uncovered

  28. 350 degree farenheit oven until cheese melts, about 20 minutes.
