  1. 50g (2 oz) dried breadcrumbs

  2. 50g (2 oz) freshly grated Parmesan cheese

  3. 2 spring onions, thinly sliced

  4. 50g (2 oz) butter, melted

  5. 1 tablespoon lemon juice

  6. 675g (1 1/2 lb) cooked and diced lobster meat

  7. 75g (3 oz) butter, melted

  1. Preheat oven to 180 C / Gas mark 4.

  2. In a small bowl, mix together breadcrumbs, cheese, spring onions, 50g melted butter and lemon juice. Set aside.

  3. Place lobster meat into 6 ramekins. Pour remaining melted butter over lobster, and top with breadcrumb mixture.

  4. Bake for 25 minutes, or until topping is browned.
