  1. Dough

  2. 1 1/4 cups all-purpose flour

  3. 1/2 cup brown sugar, packed

  4. 1 teaspoon baking powder

  5. 1/2 teaspoon baking soda

  6. 1/4 teaspoon cinnamon

  7. teaspoon slat

  8. 1/3 cup butter, cold

  9. 1 egg white, whipped

  10. 1/3 cup skim milk, room temperature

  11. 1 teaspoon lemon peel, grated

  12. 3/4 cup fresh blueberries Frosting

  13. 1 cup powdered sugar, sifted

  14. 1 tablespoon butter, softened

  15. 1/4 teaspoon lemon peel, grated

  16. water

  1. Preheat oven to 375 degrees F. Prepare a baking sheet with cooking spray.

  2. To prepare batter, combine flour, brown sugar, baking powder, baking soda, cinnamon and salt in a mixing bowl. Using a pastry blender, cut in butter pieces the size of a small pea. In another bowl combine egg white, milk, lemon peel and blueberries. Mix the dry ingredients with wet ingredients until just moistened. Drop dough from rounded tablespoon 2 inches apart on prepared baking sheet.

  3. Bake for 10 to 12 minutes or until edges are set and lightly browned.

  4. To prepare frosting, combine powdered sugar, 1 tablespoon butter, lemon peel, and enough water to mix into spreading consistency.
