  2. SOUR CREAM-PEACH MUFFINS

  7. 1/4 c All-purpose flour

  8. 1/4 c Sugar

  9. 1/4 ts Ground cinnamon

  10. 2 tb Unsalted butter, softened

  11. --MUFFINS--

  12. 3 Med. peaches, pitted, diced

  13. 1/2 c Milk

  14. 1 Lg. egg

  15. 1/2 c Sour cream

  16. 1 t Vanilla extract

  17. 4 tb Butter, melted

  18. 2 c All-purpose flour

  19. 1/2 c Sugar

  20. 1 tb Baking powder

  21. 1/4 ts Baking soda

  22. 1/4 ts Salt

  23. Prepare topping: In small bowl stir together the

  24. flour, sugar and cinnamon; with a fork, work in the

  25. butter until crumbly. Refrigerate until needed.

  26. 400F. Line

  27. 12 muffin cups with paper

  28. liners or generously butter the cups and the top of

  29. the pan around the muffin cups. In a medium bowl,

  30. whisk the egg. Then whisk in the sour cream, milk,

  31. vanilla and melted butter. Stir in the diced peaches.

  32. In a large bowl, stir together the flour, sugar,

  33. baking powder, baking soda and salt. Pour in the sour

  34. cream-peach mixture all at once and stir quickly, just

  35. to moisten; the batter will be thick and lumpy. Spoon

  36. into muffin cups, dividing it equally until the cups

  37. are full. Quickly crumble the topping over the batter.

  38. 25 to 30 minutes or until golden brown. The

  39. tops will spring back when lightly touched. Let cool

  40. in the pan for 5 minutes and then carefully remove and 10 to 15 minutes. Serve warm. - - - - - - - - - - - - - - - - - -
