  1. 3 cups 330g / 11oz Carrots - sliced

  2. 3/4 cup 177ml Water

  3. 1/2 cup 118ml Salt

  4. 1/2 teaspoon 2 1/2ml Lemon peel - freshly grated

  5. 2 teaspoons 10ml Lemon juice

  6. 1 tablespoon 15ml Parsely - fresh chopped

  7. 2 tablespoons 30ml Butter or margarine

  8. 1 Liquid sweetner

  1. Wash and peel carrots and slice in 1/4" rounds. Bring water to boil in saucepan, add carrots and salt. Cook until tender (10 to 15 minutes) covered. Drain. In saucepan add remaining INGREDIENTS until butter is melted. Toss like a salad to coat all carrots. Serve hot.
