  1. 1 lb. fresh asparagus rinsed and ends trimmed

  2. 1 cup cherry tomatoes halved or grape tomatoes

  3. 4 oz goat cheese crumbled

  4. 2 tsp olive oil

  5. 1/2 tsp kosher salt

  6. 1/2 tsp cracked fresh pepper

  7. 1/4 tsp dried oregano

  8. 1/4 cup fresh basil chopped

  9. 1/4 cup chopped walnuts

  1. lay asparagus in casserole dish, top with tomatoes, walnuts and oilve oil. Sprinkle with salt and pepper, basil and oregano. Roast in 375 degree oven for 30-35 min. Top with goat cheese and roast additional 5-8 min until cheese has melted. Yield: serves 6 Notes: Use good quality goat cheese, it makes all the difference. I get mine from Whole Foods market, or a cheese shop. You can omit the walnuts if you don't care for nuts.
