  1. 2 tsp olive oil

  2. 1 pound leeks, white and light green parts only, cleaned and sliced

  3. 2 garlic cloves, finely chopped

  4. 8 ounces mushrooms, sliced

  5. 1 14 1/2-ounce can petite-diced tomatoes

  6. 1 pound cod fillet, cut into 4 pieces 1/2 cup fresh chopped parsley

  1. Preparation: Preheat oven to 450 degrees. In a large oven-proof skillet sauté leeks, garlic and mushrooms in olive oil until softened. Add tomatoes and simmer for 5 minutes. Place cod fillets in skillet on top of vegetables. Cover and place in oven for 15 minutes. Uncover and sprinkle with fresh parsley.
