  1. 1 1/2 Pounds lean fish fillets or Parmesan cheese

  2. Dry bread crumbs or grated

  3. 1/2c All-purpose flour, cornmeal,

  4. 1 tb Water

  5. 1 Egg

  6. 1/8ts Pepper

  7. 1/2ts Salt

  8. Pan-dressed fish

  9. Vegetable oil or shortening

  1. + If fish fillets are large, cut into 6 serving pieces.

  2. Sprinkle both sides of fish with salt and pepper.

  3. Beat egg and water until blended.

  4. Dip fish into egg, then coat with flour.

  5. Heat oil (1/8 inch) in 10-inch skillet until hot.

  6. Fry fish inhot oil over medium heat 6 to 10 minutes, carefully turning once until fish flakes easily with fork and is brown on both sides.

  7. Drain on paper towels.

  8. SERVINGS; 195 CALORIES PER SERVING.
