  5. 1 c BUTTER, SOFTENED

  6. 2 1/2 c SUGAR

  7. 6 ea EGGS, SEPARATED

  8. 1/4 ts BAKING SODA

  9. 8 oz SOUR CREAM

  10. 1 ts VANILLA AND LEMON EXTRACT

  11. 1/2 c SUGAR

  12. ea BUTTERED RUM GLAZE,TO FOLLOW

  13. Cream butter; gradually beat in 2 1/2 c. sugar. Add egg yolks, one

  14. at a time, beating well after each addition. Combine flour and baking

  15. soda; add to creamed mixture alternately with cour cream, beginning

  16. and ending with flour mixture. Stir in flavorings. Beat egg whites,

  17. 1/2 c. sugar,

  18. tablespoon at a time, beating until stiff peaks form, fold into batter. Pour batter into well greased and floured 10 in tube pan.

  19. 325 degrees of

  20. 1 1/2 hours or until a wooden pick inserted in

  21. center comes out clean. Cool in pan 10-15 minutes, remove from pan,

  22. and place on serving plate. While warm. prick cake surface at 1 inch

  23. intervals with a wodden pick. Pour warm glaze over cake. Let cake

  24. stand several hours or over night before serving.

  25. BUTTERED RUM GLAZE:

  26. 1/4c plus

  27. 2 tbsp butter

  28. 3 tbsp rum

  29. 3/4 c. sugar

  30. 3 tbsp water

  31. 1/2 c.

  32. chopped walnuts.

  33. Combine first 4 ingredients in a small saucepan; bring to a boil. Boil

  34. mixture, stirring constantly, for 3 minutes. Remove from heat, and stir in nuts. Glaze cake.
