  6. 28oz Italian plum tomatoes

  7. 1 c Broth (veg, chick, or beef)

  8. 1 c Quick cooking brown rice

  9. 1 t Bottled minced garlic

  10. 2 Bay leaves

  11. 1 t Dried basil leaves

  12. 1 t Dried thyme leaves

  13. 1 t Hot pepper sauce or to taste

  14. 1 lg Green bell pepper

  15. 1 cn

  16. 16oz can black eyed peas

  17. Drained Chopped parsley or chives

  18. For garnish

  19. Combine tomatoes, broth, rice, garlic, bay leaves,

  20. basil, thyme and hot pepper sauce in a lage saucepan.

  21. Cover and bring to a boil over high heat.

  22. When rice is cooking, cut green pepper into 1 inch

  23. pieces and stir into stew Reduce heat to medium, stir

  24. 10 to

  25. minutes, stirring once.

  26. Remove and discard bay leaves. Sprinkle with parsley

  27. if desired.

  28. This is a Louisiana inspired stew, rich and fairly

  29. thick. For a thinner stew, add additional broth.

  30. Serving suggestion: Serve with garlic bread.
