  1. 2 cups Water

  2. 4 cups Sugar

  3. 1/4 cup Sugar

  4. 4 cups Pecan halves

  5. 1/4 cup Brown Sugar , packed

  6. 1 teaspoon Ground Cinnamon

  7. 1/2 teaspoon Nutmeg

  8. 1/2 teaspoon Salt

  1. Pour water and 4 cups of sugar in large saucepan, heat to boiling. Add pecans and cook for 3 minutes. Drain pecans. They will be coated with a syrupy glaze. In a medium bowl, thoroughly mix extra ¼ cup sugar, brown sugar, spices and salt. Add pecans, stirring to coat with dry sugar mixture. Turn nuts out onto a parchment-lined sheet pan. Arrange pieces so they are not touching. Toast in oven for 10 minutes at 450°. Don’t allow to burn! Remove from oven, cool completely and store up to 2 weeks in an airtight container at room temperature.
