  3. 3 pounds sugar

  4. 1 1/2 cups vinegar -- cider

  5. 1/2 cup water

  6. 1 teaspoon cinnamon -- ground

  7. 1 clove -- whole

  2. Mix the sugar, vinegar and water and bring to a boil.

  3. Add enough peaches to be covered by syrup. Cook until a straw pushes easily through to the pit. Pack into hot sterilized jars, fill with hot syrup and seal the jars.

  4. Process 25 minutes in a boiling water bath.

  5. Makes about 3 quarts.
