  1. 2 pound pork loin roast, boneless

  2. Salt and pepper

  3. 1 cup light or heavy cream

  4. 2 tbsp Creole mustard (or any whole grain mustard)

  1. Season the pork with salt and pepper.

  2. Set the dampers on your grill to low.

  3. Place the pork on the grate and close the hood.

  4. Slowly cook the pork, turning several times until the roast reads 170 on an instant-read thermometer.

  5. Allow the roast to rest while you make the sauce.

  6. Reduce the cream by half in a small saucepan.

  7. Whisk in the mustard.

  8. Slice the pork thinly, about a ¼ inch thick. Spoon the warm sauce over the pork and serve warm.
