  1. 1/4 cup(s) (packed) light brown sugar

  2. 1 1/2 teaspoon(s) freshly ground black pepper

  3. 1 1/2 teaspoon(s) dried thyme

  4. 1/2 teaspoon(s) dried sage

  5. 1/2 teaspoon(s) salt

  6. 1/4 teaspoon(s) ground allspice

  7. 1 pound(s) (about 12 slices) thick-sliced bacon

  1. In shallow bowl or pie plate, stir together brown sugar, pepper, thyme, sage, salt and allspice. Add bacon and dredge slices on both sides in spice mixture, then rub it in. Refrigerate bacon until ready to cook.

  2. Preheat oven to 400 degrees F. Line jelly-roll pan with aluminum foil.

  3. Arrange slices in one layer in pan and bake turning 25 minutes, or until bacon is golden brown and sugar mixture has caramelized. Serve hot.
