  1. 2 qt Ripe strawberries

  2. 1/2 Bottle fruity, pinot noir

  3. red wine

  4. 4 tb Balsamic vinegar

  5. 1/2 c Granulated sugar

  7. 4 Sprigs of mint for garnish

  1. Wash the strawberries and pat dry with paper towels.

  2. Remove the hulls and stems.

  3. Invert on paper towelling to drain for 1/2 hour at room temperature.

  4. Cut the berries in halves or quarters depending on size.

  5. Transfer to a glass bowl.

  6. Pour the wine and the balsamic vinegar over the strawberries.

  7. Add sugar to balance the flavor of the strawberries.

  8. Refrigerate for 2 hours, stirring about every half hour.

  9. Spoon the strawberries with a little bit if the juices into a shallow bowl.

  10. Garnish with mint.

  11. Serve with a fork and dessert spoon.
