  1. Roux

  2. 1 1/2 TBS butter

  3. 1 1/2 TBS flour

  4. 3/4 cup milk (heated)

  5. 6 TBS gruyere cheese, grated

  6. 2 TBS parmesan cheese, grated

  7. 1/8 tsp nutmeg, grated

  8. 1/4 tsp cayenne pepper

  9. 1/4 tsp salt

  10. 1 to

  11. minutes. Add heated milk and cook over medium heat until it thickens. Stir in

  12. gruyere, parmesan, nutmeg, salt and pepper. If you're not using it right away,

  13. put some pats of butter on top to prevent skin from forming.
