  3. 1 large egg your favorite pie crust recipe or two ready made crust I like Marie Callender for the bottom and pillsbury for the top

Choose 5 large, fresh lemons (this is critical to have shiny skins - if they start to get dull, they will be bitter) Slice the lemons into paper thin rounds and place in non-metallic bowl Add 1 cup sugar to lemons and let stand for about an hour. This will draw out juice. After an hour, stir in a large egg Place fruit in 2 crust pie shell (non-metallic pie pan - metal will be leached into pie by acidly filling) Bake at about 400 degrees for 45 minutes or until tender
