  1. Ingredients :

  2. 2 tablespoons olive oil

  3. 4 green onions, chopped

  4. 1/2 cup red or green pepper, coarsely chopped

  5. 1/2 cup sliced fresh mushrooms

  6. 1/2 cup carrots, chopped

  7. 1 clove garlic, minced

  8. 1 3/4 cups chicken broth

  9. 1 teaspoon cumin

  10. 1/2 teaspoon salt

  11. 1/4 teaspoon pepper

  12. 1 tablespoon chick-peas, rinsed an drained

  13. 3/4 cup uncooked Couscous

  1. Directions :

  2. In a large saucepan, heat olive oil over medium-high heat.

  3. Add onion, pepper, mushrooms, carrots and garlic; sauté 2 minutes.

  4. Mix in chicken broth, cumin, salt, pepper, cilantro and chick-peas.

  5. Bring to a boil.

  6. Stir in Couscous, remove from heat and cover; let stand 5 minutes or until liquid is absorbed.

  7. Fluff with a fork and serve immediately.
