  1. 1 (7g) sachet dried active baking yeast

  2. 60ml water

  3. 525g plain flour

  4. 1/4 teaspoon salt

  5. 100g caster sugar

  6. 1 teaspoon ground cardamom

  7. 300ml lukewarm milk

  8. 125g butter, melted

  9. 1 egg

  10. 40g sultanas

  11. 40g dried cherries

  12. 40g dried cranberries

  13. 300g icing sugar

  14. 60ml milk

  15. 1 teaspoon almond extract

  1. Sprinkle the yeast over the warm water and let stand until dissolved, about 5 minutes. Place the flour, salt, sugar, cardamom, 300ml of milk, butter and egg into the bread machine. Pour the yeast mixture on top. Close the lid and set the machine for the Dough setting. If using sultanas, dried cherries or dried cranberries, add them at the beep.

  2. When the dough has finished, divide into 12 portions and shape into balls. Place them into a greased 22x33cm (9x13 in) baking dish. Cover with clingfilm and set aside to rise until doubled in size, about 45 minutes.

  3. Preheat the oven to 180 C / Gas mark 4. Remove the clingfilm from the buns. Bake in the preheated oven until golden brown, 20 to 25 minutes.

  4. Make icing by whisking together the icing sugar, 60ml of milk and almond extract until smooth. When the buns are cool, drizzle icing over them in a cross shape.
