  1. 2 lb pork sparerib or country style spareribs

  2. Oil for deep frying

  3. Marinade:

  4. 3 tbsps soy sauce

  5. 2 tbsps dry sherry

  6. 1 tbsp ginger juice

  7. 2 tbsp cornstarch

  8. Sauce:

  9. 1 1/2 tbsp oil

  10. 1 1/2 tsp salt

  11. 2 tbsps Worcestershire sauce

  12. 1/4 cup tomato ketchup

  13. 6 tbsps sugar

  14. 1 tbsp cornstarch

  15. Garnish:

  16. 6-8 scallion flowers (see note)

  1. Cut the meat into strips, 1 inch wide and 2 inches long. Put into a saucepan, cover with boiling water and boil until the meat changes color. Drain well.

  2. Mix together the ingredients for the marinade in a bowl. Add the spareribs and leave for 30 minutes. Drain, reserving the marinade.

  3. Heat the oil to 180°C/350°F. Deep fry the spareribs until golden brown. Drain on absorbent kitchen paper, arrange on a serving plate and keep warm.

  4. To make the sauce, place the ingredients, with the reserved marinade, in a saucepan. Bring to the boil and simmer, stirring constantly, until the sauce thickens. Pour over the spareribs and serve hot, garnished with scallion flowers.
