  1. 2 x 375g packs ready-rolled puff pastry , each cut into 4 fillet steaks , thick cut, brushed with a little oil and seasoned

  2. 1 egg , beaten

  3. green beans , steamed to serve

  4. 4 tbsp mushroom pate, use a good-quality bought one

  1. Heat the oven to 220C/fan 200C/gas 7. Char-grill or sear the steaks for 30 seconds each side. Cool slightly, then top each with pâté and put them on a piece of pastry. Lay another piece of pastry on top, trim, leaving a border and seal. Glaze with egg, then bake for 12 minutes for medium rare.

  2. Know-how Oil the meat, not the pan, and cook for 2 mins each side for rare (3 for medium)
