  7. 1 Pound Green Split Peas

  8. 3 Quarts Water

  9. 1 1/2 Teaspoons Salt

  10. 2 1/2 Tablespoons Butter

  11. 1 1/2 Cups Carrots -- sliced

  12. 1 Cup Sweet Potato -- diced

  13. 1 Cup Chopped Onion

  14. 1/2 Cup Celery -- chopped

  15. 1/2 Teaspoon Marjoram

  16. 1/2 Teaspoon Cumin

  17. 1 Teaspoon Basil

  18. 2 Cloves Garlic -- minced

  19. 1/2 Cup White Wine

  20. Black Pepper -- to taste

  21. Put peas in large pot with water and salt; bring to boil, lower heat

  22. and simmer for 1 hour. Skim off foam and discard. Saut‚ finely chopped

  23. carrots, sweet potato, onion and celery for 10 minutes, stirring

  24. constantly. Add herbs, cook vegetables for another 5 minutes, then add

  25. 45 min to

  26. hour. Remove approximately half the soup, pur‚e. Return pur‚e to pot,

  27. add wine and pepper, and stir. Bring soup back to simmer before
