  1. 1 tablespoon oil

  2. 1 cup finely chopped onion

  3. 1 cup finely chopped green bell pepper

  4. 2 cloves garlic, finely chopped

  5. 1 (15-ounce) can chopped tomatoes

  6. 1/2 cup ketchup

  7. 1/4 cup packed light brown sugar

  8. 1/4 cup cider vinegar

  9. 2 tablespoons prepared brown mustard

  10. 2 teaspoons chili powder

  11. 1/2 teaspoon salt

  12. 2 (4-pound) frying chickens, each cut into 8 pieces

  1. Preheat oven to 375 degrees F. Heat oil in a large skillet. SautÈ onion, bell pepper and garlic until lightly browned. Stir in tomatoes, ketchup, brown sugar, vinegar, mustard, chili powder and salt. Bring to a boil over high heat.

  2. Arrange chicken in shallow roasting pan. Top with sauce and roast 40 to 50 minutes, turning occasionally until tender and browned.

  3. Remove the chicken and sauce to a serving platter and serve.
