  1. 1 lb Chicken breast fillets

  2. 3 Lettuce leaves, shredded

  3. 1 c Bean sprouts

  4. 1 3/4 oz Rice vermicelli

  5. 1 Piece dried galangal

  6. 3 ts Sambal oelek

  7. 1/2 ts Shrimp paste

  8. 1 tb Sugar

  9. 2 ts Chicken stock powder

  10. 6 c Water

  11. 1/2 ts Tumeric

  12. 3 ts Ground cumin

  13. 2 Cloves garlic, crushed

  14. 2 tb Chopped fresh coriander

  1. * Soup can be prepared a day ahead.

  2. * Storage: Covered, in Fridge.

  3. * Not suitable for freezing.

  4. * Microwave: Suitable.

  5. Method : Cut chicken into 2 cm slices.

  6. Combine garlic, cumin and tumeric in pan, stir over heat for about 1 minute or until fragrant.

  7. Add chicken, water, stock powder, sugar, paste, sambal oelek and galangal to pan, stir util combined.

  8. Bring to boil, simmer, uncovered, for 10 minutes.

  9. Add vermicelli to pan, simmer for 10 minutes.

  10. Just before serving, stir in bean sprouts, lettuce and coriander.
