  1. Yogurt-glazed Gingerbread

  2. I am posting in response to the request for gingerbread recipes. This is

  3. a really scrumptious recipe my mother got out of a ladies' aid society type

  4. cookbook from the 1960's. The yogurt glaze is what makes it--strange but

  5. true.

  6. CAKE

  7. 3/4 c. butter/margarine

  8. 3/4 c. sugar

  9. 2 eggs

  10. 3/4 c. molasses

  11. 2 1/2 c. flour

  12. 2 teaspoons powdered ginger

  13. grated ginger, too, but I'm not sure what the equivalent amount would be)

  14. 1 1/2 teaspoons cinnamon

  15. 1/2 teaspoon cloves

  16. 1/2 teaspoon nutmeg

  17. 2 teaspoons baking soda

  18. 1/2 teaspoon baking powder

  19. 1 c. boiling water

  20. Preheat the oven to 325. Beat the butter with the sugar until light

  21. and fluffy. Add the eggs and the molasses. Sift the dry ingredients

  22. together, then add them to the butter-sugar mixture alternately with the

  23. 9x9 boiling water. Mix just until smooth. Pour into a greased

  24. 9x9 inch baking

  25. dish and bake for 40 minutes. Meanwhile, make:

  26. GLAZE

  27. 1 c. sugar

  28. 1/2 c. yogurt

  29. 1/2 t. baking soda

  30. 1/2 t. whole cloves

  31. 1/4-1/2 c. butter

  32. Mix all the ingredients in a saucepan and boil for 1 minute. If you're

  33. squeamish about the whole clovesnd boil for 1 minute. If you're

  34. squeamish about the whole cloves, take them out after boiling. As soon as

  35. the gingerbread comes out of the oven, prick it all over with a toothpick

  36. and pour the glaze on. Allow it to set for several hours.
