  1. 2 lbs 908g / 32oz Uncooked large shrimp - shelled, cleaned

  2. Fresh pineapple - cut 1" chunks

  3. 1 Onion - cubed (large)

  4. Marinade

  5. 1 cup 237ml Pineapple juice

  6. 1/4 cup 59ml Olive oil

  7. Juice of 2 fresh limes

  8. Fresh dill

  9. Salt - to taste

  10. Freshly-ground black pepper - to taste

  11. Sauce

  12. 1/2 cup 118ml Southern Comfort

  13. 2 cups 474ml Orange marmalade

  14. 1/2 cup 118ml Pineapple juice

  15. 2 teaspoons 10ml Hot sauce

  16. 1 tablespoon 15ml Minced jalapeño pepper

  17. 1 teaspoon 5ml Finely-minced fresh ginger

  18. Juice of 2 fresh lemons

  19. 1/2 teaspoon 2 1/2ml Salt

  20. 1/4 teaspoon 1 1/3ml Freshly-ground black pepper

  1. Place shrimp in marinade and leave for at least 1/2 hour.

  2. Alternate shrimp on skewers with chunks of fresh pineapple and cubed onion. Grill until the shrimp turns pink and is firm to the touch.

  3. Sauce: Combine all ingredients. Warm sauce over medium heat; cool prior to serving. (May be prepared in advance and refrigerated.)
