  1. splash of olive oil

  2. 2 clove garlic , chopped

  3. 1/2 red onions , finely chopped

  4. 400g canned flageolet beans , rinsed

  5. 12 cherry tomatoes , halved

  6. 2 slices of focaccia

  7. 1 tbsp capers

  1. Heat the olive oil in a heavy-based frying pan and add the garlic, red onion, flageolet beans and cherry tomatoes. Fry for 3 minutes until warmed through.

  2. Meanwhile, griddle the focaccia bread.

  3. Pile the flageolet mixture onto the focaccia and sprinkle with capers.

  4. Serve immediately.
