  1. 2 lbs 908g / 32oz Brussels sprouts - cleaned

  2. 3/4 cup 109g / 3.8oz Dry bread crumbs

  3. 1 Egg - beaten

  4. 1 tablespoon 15ml Milk

  5. 1/2 cup 118ml Olive oil

  6. Salt - to taste

  1. Cook sprouts until just tender in boiling salted water (10 to 15 minutes).

  2. Take care not to overcook; very tender sprouts may be done in less time. Drain, roll in bread crumbs, dip in beaten egg, and roll in bread crumbs again.

  3. Fry until brown in olive oil heated to the verge of smoking. Drain on paper and serve.
